The drum cooker is a relatively new unit to make it’s way into the BBQ world of late. The concept is more of the Southern direct way to smoke meats than either the Weber bullets or the famous Texas offsets
In both of the latter, the juices from the cooking meat do not drop directly on the fire/coal base but are kept separated from the heat.
The drum cooker lets the accumulated meat drippings fall on the coals to vaporize back towards the upper portions of the unit.
A lot has been said concerning the merits of both styles of BBQ pits. We have cooked and done fairly well on Texas off-sets, Weber bullets, pellet cookers, ceramics and even a hole in the ground or two...
I have zero experience with a drum cooker, so to satisfy my curiosity I will build, test and cook on the drum pit, which I will make here in Edgewood using basic tools and readily available materials.
If I can do this project… anyone can, probably better.
I will also cook and test the homemade pit and report back to you, the reader, the results in as objective and concise manner as I can.
I will have a material list and use common tools found around the average garage.
I will take as many notes and include as many tips as I can… in the event you want to try to build your own BBQ pit.
The weather is suppose to turn for the worse in the next couple of days… which will force me into the garage….and in to an amateur pit builder. Look down a few articles to the progression I’m on and you will see how far I’ve come… wood to steel, I’m gaining ground on you Mr. Klose!

Total newbie to this site so...Howdy!!! Im out of Tacoma and am looking for some food grade drums. any idea where I can find some. I keep my eye on Craigslist but have yet to come accross any. I would love a 38 gallon if possible.

I gotta admit, of all my cookers, the drum is my favorite! When I competed at Alki, I decided to go all Weber, and even though things went smooth, I missed my drums and wished I'd brought them. I got a few tips from Bubba and Jeff (KC Can Crew) at the Jack that I'm going to play around with, these guys ain't slouches and they win Big Time. ![]() |

I uploaded a couple of pics of the UGLY drum smoker to my album. One caution I would give anyone building a UDS. Don't put too many draft holes in the bottom!!! I bought a sweet step drill bit and put 4-1" holes in the bottom. The temp shot up to 375 deg and kept rising. I ended up plugging 3.5 of the holes and it settled down at about 260. I can't wait to cook some brisket and pork butts on this thing.

I am going to jump into this Drum Corps thing too! My father-in-law just dropped off a 55 gallon drum with lids. It had sesame oil in it. Smells good. I am going to start constructing today.

Here is a pic of an early prototype drum smoker I did, it worked pretty good until I decided to go with a BDS clone.
![]() I used an 18.5" Weber kettle for the coal basket and drilled a bunch of 1/2" holes for vents ![]() ![]() I set it in the drum and filled it with briqs and it cruised pretty good, but I had too many intake vents and temps were hard to control at the start. Then I found some Food grade 38" drums and went another direction. They have 2 cooking grates and will hold a lot of meat if needed. ![]() ![]() ![]() ![]() ![]() Direct heat with no drip pan! I turn my meats and usually spray with Apple juice. Nothing like the smell and taste of the Drum smokers!! Just remember to keep the lids on at a Competition!! ![]() |
