Many of you, because of your prowess around a BBQ pit, are asked to do “a little something” for your office, church, school, or work during the holiday season. From a small group at the office, to a rather sizable fundraiser. This may seem a little daunting at first, but it can be a great learning opportunity for some potentially lucrative summer jobs in the world of catering.

You have the skill to cook, but do you don’t know how much to cook. Your friends have told you your BBQ is the best…even better than that guy who has that web site…you know that guy over at Apple Timber something or other.

Well ladies and gentlemen maybe its time to “pull the trigger”,” but…but, I don’t have the faintest…I mean how much do I serve?” You say.

In the spirit of the season, and a possible gig or two, that guy from “Apple Timber something or other” will share some information about quantities and costs involved to keep you from losing your proverbial shirt or running out of ribs just when the big boss comes through the serving line.

And what would you think if we made this as easy as plugging in the numbers to a worksheet… and the costs were even figured into the equation.

I am providing a Link for just such a magical formula…but remember, if you find yourself over your head, that guy from “Apple Timber something or other”... has pit and will travel, if and when you might bite a little more off than you can comfortably masticate.

Alan, Not being an expert on this issue I would start here for info on your first question.

Your second question about insurance would best be answered by your insurance carrier since all policies are different in how they are written and the limits set forth in those policies. Make sure you have the required riders in place with the limits meeting or exceeding the usual 1 million dollar standard. Protect your ASSets!

The last question...besides the food handlers permit a certified kitchen is required and it helps to have a good business plan going into the world of catering.

Great information for planning however some issues hard to find information on relates to the operation itself:

(1) At what point is a state small business license necessary?

(2)When cooking for a group even if you volunteer your services is it necessary to make sure you are covered by insurance? Some home owners policies may cover it on a one time basis or for a slight charge if I hear correctly.

(3) Other than maybe a food handler permit, any other requirements?
