We are continuing our Mardi Gras theme that we started in the last article. Today being Sunday, and red beans and rice, the focus of our next article, is typically made from the leftovers of a Sunday ham dinner. Before dinner, you have to have breakfast. Tex has been totin’ this bacon recipe around for umpteen years…according to her. Today was the first time I had the opportunity to try it…and believe me it is a staple from now on. So before the ham goes on for Sunday dinner, breakfast is served.
This simple, easy to do, treatment of bacon is just possibly the best bacon I have ever had. The steps to the recipe are captioned below the pictures to follow.
First, the ingredients:
1 lb. Thick sliced bacon (next time I am going to experiment with peppered bacon)
1 c. Brown sugar
¼ c. (estimated) Maple Sugar (make sure you use 100% pure maple sugar-you will only need a heavy sprinkle on one side of the bacon)
Line broiler pan with foil. Lay out bacon flat, fitting as many pieces as possible in the pan. The bacon can touch, but must not overlap. 
Pat ample brown sugar on both sides of bacon, pressing sugar into bacon. You should not be able to see much of the bacon through the sugar once coated. Heavily sprinkle maple sugar on only one side of bacon.
Place in Broiler for 8 minutes, or until the bacon is done, and before the sugar burns, turning once half way through broil time. A NOTE: The bacon will NOT be crispy when done. 
Remove bacon, and let stand in caramelized syrup in pan for approx. 10 minutes or until the bacon has darkened and has a sticky coating. 
Remove bacon from drippings and place on paper towel and pat “dry”. If you pat dry too soon or too late, this coating will stick to paper towel. Serve. Once completely cool, eats like candy.
