We have been down on the bayou, figuratively anyway, for a while with some Cajun cookin’. Before we go any deeper into the swamp I think we should showcase one of the most popular dishes that comes out of the Louisiana low country and bring you back in time to when cooking on the tube was in it’s infancy.

Justin Wilson’s “Dirty Rice” is a classic and he was one of my inspirations to try Cajun cooking oh so many years ago. This episode from his TV show will not only give the “feel” of Cajun cookin’, but also a mighty fine and easy to do dish that has been a favorite of mine for years. Notice the wood fired oven in the back round.
